The grapes are carefully picked at optimum ripeness and sorted. The winemaking begins with a cold maceration between 48 hours. Free-running and pressed juices are blended before starting the process of alcoholic fermentation on fine lees for about 20 days, followed by the malolactic fermentation that gives a fuller and richer wine. 2 thirds are aged in demi-muid oak barrels hwhen 1 third is aged stainless steel vats for one year and a half.
The entire process is performed in a temperature-controlled environment (19°C) which gives an aromatic and fruity bouquet with roundness.
A unique Tavel of plot selection of the oldest vines planted 80 to 90 years ago by Grand Father Eugène. A very elegant rosé wine, excellent to pair with any spicy European, Asian and oriental cuisines.
