Domaine Diminoit
The 30 hectare estate is located between Nîmes and Arles, on the Costières plateau. Here 14 Mediterranean grape varieties have found perfect conditions to flourish on this beautiful soils of clay and limestone, covered with rolled river pebbles. The selection of grape variety was essential in order to give typicity and complexity to wines that the landlord and winemaker Dominique Linsolas defines as of feminine inspiration.
The modern cellar is equipped with stainless steel tanks of variable sizes, all temperature-controlled.
This equipment makes it possible to vinify each grape varieties separately in a plot selection process. The vineyard is made up of typical regional varieties such as Grenaches, Syrah, Marselan… But also of atypical grape varieties for this region such as Nielluccio, Viognier or Roussane that have found a terroir magnificently favorable to their development.
The result are wines of unusual blends for this region which are characterized by their delicate roundness, the elegant suppleness of their tannins and the natural expression of the fruit

Bohème 2019
Blend of Syrah and Viognier in the pure style of the Northern Rhone Valley. The two varieties are harvested and vinified separately in stainless steel tanks before blending and aged 12 months. A delicate and elegant wine with silky tannins and a fresh finish.

L'Instant 2019
Originally from Tuscany and famous in Corsica, our Nielluccio has found a fantastic terroir to develop on Rhone terraces of rolled pebbles and an ideal Mediterranean climate. Fifty percent of the harvest is machine harvested at full maturity. Barely trampled, it is vatted for a two-week maceration time with daily pumping over. Fifty percent of the harvest is hand-picked and collected in small capacity boxes to be vinified in carbonic maceration. The two vats are blended in December, then aged in stainless steel vats for a year. This cuvée a perfect balance or fruitiness and freshness. It brings pure pleasure for the taste buds. Perfect to pair with cold cuts and red meats.

Somnambule 2019
Typical white variety from the Rhone Valley, our Roussanne is planted on the southernmost of the Rhone terraces. Harvested at night and vinified under temperature-controlled conditions. After two weeks the cold fermented juice is transferred to stainless steel vats for an 18-month aging. A long vatting that allows the Roussanne to reveal all its richness and delicacy.This cuvée is ready to enjoy now but will evolve very well if kept three to five years in a good cellar. To be enjoyed with poultry, river fish and cheese.

Each variety is harvested and vinified separately. The berries are harvested at full ripeness and the fermentation is made under temperature control conditions in stainless steel vats for two weeks with daily pumping over. The juices are seperately aged 3 month before blending. The wine is then aged minimum 12 month before bottling.
A pleasure wine to enjoy in its youth with beef BBQ, exotic and Asian food, matured cheese or dark chocolate.

Confidence White 2019
The 3 varieties are harvested at night and gently pressed in order to keep freshness and acidity. After 48 hours cold settling, the clear juice is fermented during two weeks in stainless steel vat under temperature control. The alcoholic fermentation is stopped by sterile filtration early enough to keep a naturally high sugar level, giving this white moelleux cuvée its characteristic fruitiness.
A semi-sweet and fruity wine to enjoy in its youth, spicy exotic and Asian food, blue cheese and chocolate dessert.
