Domaine des Chanssaud
The Popes in Avignon started developing the vineyards in the 14th century. The vineyard of Châteauneuf-du-Pape became AOC classified in 1935 and today is one of the most renowned Crus, recognized and appreciated by connoisseurs around the globe.
The Domain des Chanssaud belongs to the Jaume family since 1826. We can still find a cellar with thick stone walls adjacent to an ancient building with a spiral staircase, a bread oven, and a sink in stone, identical to those of the Antique Roman Theatre of Orange.
From the 19th century until today, generations of winemakers have followed. The original estate consisted of vineyards, cherry orchards, and olive groves has become over time, a vineyard of fifty acres managed since 1987 by Patrick Jaume. A friendly wine tasting room was intgrated in the old cellar among the large oak tuns.
The most recent part of the winery was built in 1994 and blends technology and ancestral expertise to make a range of Chateauneuf-du-Pape, Côtes-du-Rhône Villages, and three colors of Côtes-du-Rhône.

Châteauneuf-du-Pape
Châteauneuf-du-Pape White 2018
This wine goes well with fish, seafood, and is also delicious to drink with sheep or goat cheese or simply as an aperitif.
Very aromatic wine with aromas of white flowers, citrus scents, and apple. Depending on the maturity of the grapes it develops flavors of pear and tropical fruit, combining freshness and softness.
The grapes are hand-picked and sorted during the harvest to keep only the healthy ripe grapes. They are pressed and the juice settles during 24 hours. The fermentation is temperature controlled (16° to 18°) allowing the extraction for a maximum of aromas and fruit flavours. The alcoholic fermentation will end between 10 and 15 days then the wine is left to settle and the malolactic fermentation is blocked. The wine will be bottled at the beginning of the following year.
