Domaine Vallet
Domaine Vallet is a property of 11.5 hectares located in Serrières at the edge of the Ardèche in the Northern Rhône. They produce red and white Saint-Joseph and Condrieu.
These wines are easy to drink, enjoyable in their youth, and they reach maturity after 4 to 6 years.
Member of a cooperative winery until 1989, Louis Vallet pulled out and started producing his own estate's wine in 1990. His son Anthony joined him ten years later, and this was the beginning of a new adventure. Today Domaine Vallet is considered the new rising star of these appellations.

Saint-Joseph
Saint-Joseph "Muletiers" 2016 Red
This wine is excellent to accompany duck, wild boar, and smoked meats.
Harvested by hand. Destemming depends on the year. We always keep 30% of the stems to aid in the vinification.
Low yields (30 hl/ha). The cap is punched over three times every day. Maceration lasts about 25 days.
Aging takes place over 15 months in new(20%) and old oak barrels.

This wine is excellent as an aperitif, with fish, foie gras, and goat cheese.
Harvested by hand.
Separation during the pressing (whole grape bunches without destemming) of the free-run juice and press juice.
Stirring is done on the delicate lees.
30% of the juice is aged in tank and 70% in oak barrels for about 7 to 9 months.

This wine is excellent to accompany prime rib and venison.
Assembling of different vineyards located mainly in the municipality of Serrières and Limony.
Harvested by hand.
Totally destemmed, which allows for long maceration (about 4 weeks) in open vats with pumping-over in the mornings and evenings.
This wine is then aged in oak barrels for about 10 months.

Saint-Joseph "Méribets" White 2017
This wine is excellent to accompany as an aperitif and with fish.
Harvested by hand. Pressing is done with the whole grape bunches just after the harvest. Then 60% of the must is put in oak casks, and the rest remains in stainless steel tanks.
Alcoholic fermentation happens around 15-17 °C with stirring on the delicate lees. Then aged on the lees in new barrels for one year. This wine is then assembled with the wine aged in the tanks. Bottling is done about 9 months after harvest.
